RED Technical Data: Vintage: 2002. Region: Tierra de Castilla. Type: Red. Alcohol content: 12,5%, by volume. Sugar content: 2 g./litre. Production method: The must is fermented under temperature-controlled at a maximum of 28ºC. It undergoes various remontages during the fermentation process to favour the extraction of tannins and colour. Finally, the wine is removed from its original vat to separate the must-wine from the skins and allow the fermentation process to finish slowly. Once fermentation is completed, the wine is stabilized and undergoes an amicrobic filtering process before bottling. WHITE Technical data: Vintage: 2002. Region: Tierra de Barros. Type: White. Alcohol content: 11,5% Vol. Sugar content: 2,2 g/litre. Productin method: Once the must has been carefully filtered, it undergoes a slow fermentation process, in stainless steel tanks, at a controlled temperature (never exceeding 18ºC). After fermentation, the wine passes through a cold stabilization treatment and subsequently, just before being joined, it is microbiologycally filtered.
